Maple-Roasted Carrots & Parsnips: A Delicious Holiday Side 🥕🍁

This veggie side dish is so good and one of my favorites to make during the holidays. The carrots and parsnips are roasted until soft and the flavor just oozes out!

Prep time: 10 mins
Cook time: 30 mins
Serves: Family

Ingredients:

🥕 4 carrots
🥕 4 parsnips 
🥕 2 tbsp maple syrup
🥕 1 tbsp olive oil
🥕 2 tbsp butter (melted)
🥕 Black pepper (to taste)
🥕 1 tsp dried thyme 
🥕 Salt (to taste)  

Instructions:

1.    Preheat oven to 360°F/180°C and line a baking tray with parchment paper.

2.    Peel the carrot and parsnips. 

3.    Slice in half and then slice each half lengthwise into half or quarters, depending on the thickness of your carrots/parsnips. 

4.    In a bowl, whisk together the maple, olive oil, butter, salt, pepper and thyme. 

5.    Pour over the veggies, ensuring they are all well coated. 

6.    Cook for 30 minutes. 

7.    Serve as a side dish and enjoy!
