Ingredients:
🥚 5 eggs
🥚 1 tbsp olive oil
🥚 1 small red onion, finely diced
🥚 6 asparagus spears, finely chopped
🥚 1 tsp minced garlic
🥚 1/2 tsp black pepper
🥚 1/2 cup grated cheddar cheese
Instructions:

Heat the olive oil over a low-medium heat. When hot, add the finely diced onion and asparagus. Sauté for 5 minutes, until soft.

Add the garlic and black pepper and cook for a few more minutes.

In a bowl, whisk the eggs well, then pour the egg mixture into the pan with the veggies. Swirl the eggs so that they spread evenly.

Sprinkle over the grated cheese.

Pop the lid on and cook for 10 minutes, until the eggs are set and cooked through.

Remove the lid, place the pan in the oven, and broil/grill for 3 minutes.

Cut into slices and serve. Leftovers can be stored in an airtight container in the fridge for 2 days. Enjoy!
