Blueberry & Beetroot Muffins + Porridge Pizza Recipes

Blueberry & Beetroot Muffins
These blueberry & beetroot muffins are not only dairy and egg-free but they’re also refund sugar-free and wheat-free. So they’re perfect for vegan baby-led weaning. They make great breakfast sides and are also convenient for on-the-go snacking.
Dry Ingredients:
🌱1 cup oat flour (rolled oats whizzed up in blender)
🌱3/4 cup buckwheat flour
🌱1 cup ground almonds
🌱2 tsp cinnamon
🌱2 tsp baking powder
🌱 1 tsp bicarbonate of soda
Wet ingredients:
🌱 2 bananas
🌱 2/3 cup almond or other plant milk
🌱 1/3 cup grapeseed oil
🌱 juice of 1 small lemon
🌱 2 tsp vanilla extract
🌱 3 medjool dates
🌱 300g grated beetroot
🌱 1 cup fresh or frozen blueberries
🌱 3 tbsps flaxseeds mixed with 6 tbsp water & left to set
Directions:
- Preheat oven to 180° and grease mini or normal sized muffin trays with coconut oil.
- Sift all the dry ingredients into a large mixing bowl
- Blend the wet ingredients including just 1/2 cup of the grated beetroot & leaving the blueberries aside
- Pour the wet ingredients on top of the dry along with the rest of the grated beetroot and mix together with a folding action (be sure not to overmix)
- Add the blueberries and fold together a few more times
- Pour the batter into the muffin moulds and bake in the oven for 16 minutes if making mini muffins and around 18 minutes for normal size
- Remove from oven and leave trays to cool for 10 mins before transferring onto a wire rack to cool

This porridge pizza is perfect to make right into the Zelda Tri-Force Grip Dish as it is microwave-safe and creates the triangular pizza shape for baby to hold and feed themselves.
Ingredients:
Raspberry Crush
🔸4 tbsp rolled oats
🔸 2 tbsp crushed raspberries
🔸 1 tbsp ground flax seeds
🔸 1 tsp shredded coconut
🔸 3 tbsp plant milk
Carrot Cake
🔸 4 tbsp rolled oats
🔸 1/4 cup carrot purée
🔸 1 tsp cinnamon
🔸 1 tsp ginger
🔸 1 tbsp mashed banana
🔸 3 tbsp plant milk
Peanut butter & banana
🔸 4 tbsp rolled oats
🔸 1 tbsp peanut butter
🔸 1/4 cup mashed banana
🔸 3 tbsp plant milk
Directions:
- Mix all ingredients together in a bowl and pour into a dish or mould and press down flat.
- Cool on high in microwave for 2 minutes. Remove and allow to cool before slicing and serving.
