We know leftovers aren't always the most exciting, but we've got a fun recipe for you if you've got some leftover mashed potatoes sitting in your fridge. These 15-minute loaded mashed potato waffles are sure to hit the spot for breakfast, lunch, or dinner!
Yield: 2 large waffles
Prep Time: 10 minutes
Cook Time: 5 minutes
Ingredients:
🧇 1 egg, whisked
🧇 1 tablespoon olive oil
🧇 1 egg
🧇 1 tablespoon chopped chives
🧇 ½ cup shredded cheddar cheese
🧇 ¼ cup all purpose flour
🧇 ¼ teaspoon baking powder
🧇 ¼ teaspoon baking soda
🧇 1 cup leftover mashed potatoes
🧇 Unsweetened plain full-fat Greek yogurt, for dipping
Instructions:

Heat a large waffle iron.

Spray both sides of waffle iron with nonstick cooking spray.

In a large bowl, add all of the ingredients.

Mix all ingredients.

Using a ladle, scoop batter into waffle iron, close and lock. Cook until done, about 4 minutes.

Carefully remove the waffle from waffle iron with a fork. Serve with optional unsweetened Greek yogurt.
