It's peach season!! 🍑 My family is adding these juicy treats to just about every meal, breakfast being one of our favorites! We have a super simple muffin recipe for you to whip up in just a few minutes, where you can throw all ingredients into the blender!
- Yield: 12 servings
- Prep Time: 10 minutes
- Cook Time: 25 minutes
Ingredients:
- 2 cups rolled oats
- 2 medium bananas
- 2 eggs
- ¼ cup olive oil
- ¼ cup maple syrup
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 peaches, diced
Instructions:
1) Preheat oven to 350F. Grease the tins of a muffin pan with nonstick cooking spray.
2) Add the oats, bananas, eggs, olive oil, maple syrup, baking powder, baking soda, cinnamon, and salt into a blender.
3) Blend until smooth.
4) Toss in diced peaches, and using a wooden spoon, stir to mix peaches into the batter.
5) Pour batter into muffin tins, filling about ½ full.
6) Bake in preheated oven for 25 minutes.
