Growing up, my mom would make apple-carrot-beet juice for me and my sister. It was so tasty and nutritious, and today, my kids enjoy that same recipe! So I incorporated that same recipe into jellies- they turned out delicious. I wanted to use Halloween-themed molds, but any shaped mold will do.
Ingredients:
🦴 1 cup diced apples (I used Gala apples)
🦴 1/4 cup diced carrots
🦴 A little less than 1/4 cup chopped cooked beets
🦴 3/4 cup pure apple juice (I used one without added sugars)
🦴 1 tablespoon freshly squeezed lemon juice
🦴 3 tablespoons pure maple syrup, optional
🦴 3 tablespoons water
🦴 3 tablespoons of gelatin (I used grass-fed)
Method:

Add apples, carrots, cooked beets, apple juice, lemon juice, and maple syrup to a high speed blender and blend until smooth. Transfer it to a saucepan.

Bring the mixture to a boil (while mixing it a couple of times) and turn the heat off. Set it aside.

Add 3 tablespoons of gelatin to a heat-safe glass bowl or container. Then add 3 tablespoons of water to the gelatin, mix, and allow to sit for 5 minutes to bloom.

Add the heated liquid to the bloomed gelatin. Mix very well until gelatin dissolves and clumps/lumps disappear (for about a minute or so). Allow to sit for 3 minutes. Note: Mix it one last time before spooning it into the mold.

Place the gummy molds on a baking sheet and spoon the liquid into the gummy molds. Transfer the baking sheet with the gummy molds to the refrigerator. Allow to chill for 1 hour or until they’re set. Note: jellies in smaller sized molds might firm up faster than jellies in larger sized molds.

Store extras in an airtight container in the refrigerator. Enjoy!
